I keep most of mine in drawers in the closet in my sewing room, though I do have a couple of bins for the excess. A couple of months ago I went through every piece, sorting out the ones that I no longer wanted and folding the others more uniformly. I tied some fabrics that I coordinated for specific projects that occurred to me as I folded, using a strip from my scrap bin to bundle them so that they are ready to go when the whim strikes me. I shared the rejects with my friends in my local guild, as some of them have generously done with the pieces that they don't want any more. Now that my diet is over, I buy for special projects or to fill "holes" where I've used up a certain color or type of fabric.
